Salmon Patties

Makes 10 

1 cup of panko breadcrumbs 

½ onion, grated 

1 garlic, minced (or tsp minced garlic)

400g canned piink salmon, drained 

2 green onion stems, finely sliced 

¼ cup of fresh dill or 1 tsp dried preferred herbs 

2 eggs

½ cup parmesan cheese

Salt & pepper to taste 

Cooking spray 

 

Preheat oven to 200 fan forced. Grate the onion into a bowl and mix breadcrumbs into the onion juice, ensuring all breadcrumbs are soaked. Add remaining ingredients except salmon and mix well. Add Salmon Stir through gently, leaving some flakes. Using a ¼ cup measuring cup, scoop up the mixture and form a round patty, lightly squeezing in your hands to slightly flatten- don’t press onto the baking tray. Spray oil for 2-3 seconds onto a baking tray or a lined baking tray, Place the tray into the oven for 2 minutes to heat the oil. Pull out, then place patties onto the tray and bake for 15 minutes. Flip, spraying the surface with oil if needed and bake for another 5 minutes. Enjoy 2-3 Patties in salads or use in a burger!
