Serves 6
500g turkey/ chicken mince
400g Raw Protein Pasta, then cooked to liking conserving 1 cup of water
2 tbsp red pesto
1 tbsp tomato paste
1/4 cup pouring cream
1/2 onion, diced
2-3 garlic cloves, crushed
1 standard pack of spinach leaves
1 tsp dried oregano
salt & pepper
Cook Pasta following packet instructions, conserving 1 cup of the water when draining.
Then, heat a non stick frying pan and add onion, garlic and cook for 1 minute, then add the mince and cook until meat is just cooked through. Add the pesto and tomato paste and stir through. Then add the pouring cream and slowly start adding the water in until desired sauce consistency appears. I only used 1/2 cup in the end. Then add spinach leaves and toss until they wilt into the mixture.
In a large bowl or baking dish, add the pasta and the meat mixture and stir through to combine the two together. Season with salt & pepper.
