Quick Shepherds Pie

800g frozen mashed potatoes (Cals calculated using frozen mash)

500g beef or pork mince (or any mince of choice- Cals done off beef) or V- Drained lentils.

Pre-packed Stir fry mixed veggie pack 

Mingle Chipotle seasoning sachet 

750g passata sauce 

 

Place a large saucepan with ¾ full of water and bring to the boil. Peel potatoes, chop into quarters and boil until soft- alternatively, if using frozen mash, do this step after cooking the mince: place 800g of frozen mash into a large microwavable bowl and microwave in 4-5 min lots, stirring to combine as you go. Should take 7-8 mins to fully heat the potatoes. 

Preheat oven to 180d. Heat oil in a large frying pan, add beef mince and break apart as it cooks. Add the chipotle sachet and stir to combine into the meat. Add the veggie pack and toss to cook through the vegetables. Once the vegetables soften slightly, add the passata sauce. Cook on medium for 5-10 min, stirring occasionally or until the sauce thickens slightly. Allow to slightly cool as you mash and prepare the potatoes, if making the mash add a little milk at a time, to soften the potatoes. Pour mince into a baking dish, evenly distribute the mashed potatoes over the mince and bake for 20 minutes.
