(Makes 6- serves 2)
100g Rolled oats
2 eggs
100g high protein cottage cheese (I used bulla)
1 medium ripe banana
½ tsp baking powder
1 tbsp almond milk
Place all ingredients in a nutribullet/ blender until all combined.
Heat a frying pan to medium heat with spray of oil. Depending on the size of your pan, divide half the batter into 3 pancakes. Allow to start to bubble on top, before flipping. Then cook for another 1-2 minutes until spongey to press. Do the same for the next batch of 3.
Serve with your Favourite toppings. I like 160g Yopro yogurt, with microwaved frozen berries (90sec).
