Lemon Loaf

1 3/4 Vetta Smart Protein Flour, or All purpose flour or GF flour or almond flour (much higher calorie)

1 tsp baking soda 

1/4 tsp salt 

1/4 cup monkfruit sweetener ( or honey if not watching calories) 

30g melted low-fat butter 

1 egg 

1/4 cup lemon juice 

1/4 cup almond milk 

1 tsp vanilla essence 

1 tbsp lemon zest 

140g YoPro yogurt 

 

Preheat oven to 180d. Mix the flour, baking soda, and salt in a bowl. In a seperate bowl mix sugar/ honey syrup, egg, butter, lemon juice, almond milk, vanilla, lemon zest and yogurt. 

Combine wet & dry together. Place into a lined loaf tin and bake for 40-50 min or until a fork comes out clean. (slice into 12 pieces).
